I love shrimp
Like a lot lol and I'm always trying to figure out new ways to cook it for myself and others, so when I came across this yummy looking recipe that was also SUPER cute I decided to give it a try.
This Pineapple shrimp boat is a cute idea for small tropical themed parties, summer time cook outs or even just to spice up dinner with bad or the kids. Its easy to make and taste amazing!

The Pretty Girls Pineapple Shrimp Boat
The perfect summer yum recipe <3
Ingredients:
The ingredients list below will be enough to make fill one pineapple (two halves/one serving for each person) if you are making this for a party or just want more please multiply ingredients as needed.

1/2-3/4 Pound of fresh uncooked shrimp
1 Whole pineapple (more as needed)
1/2 Green pepper
1/2 Red pepper
1 Clove of garlic
2 Tabs of butter
2 Tabs of butter
Kikkoman teriyaki sauce (plain)
Pineapple juice (from whole pineapple)
Pineapple chunks (from whole pineapple)
Honey to taste
Pineapple juice (from whole pineapple)
Pineapple chunks (from whole pineapple)
Honey to taste
Onion powder & black pepper to taste
Margies Mango teriyaki sauce (I did not use this)
Instructions:
1. Cut your pineapple in half the long way (from top to bottom) the easiest way to do this is to cut from the top of the of the pineapple right under the leafy part, then pull the knife down and around to the other side just below the leafy part. Then take the knife and cut from just under the leafy part and through it chopping straight down.
2. Cross hatch the inside of the pineapple and then scoop out with a spoon. This may take a little force, however if you get one section out you can use the knife to cut along the bottom and loosen the pineapple bits but be sure not to actually cut through the pineapple.
3. Scoop out remaining chunks and juice making a crevice in the pineapple and store to be used for the marinade.
4. Prep your shrimp by peeling and washing it and setting it to the side
5. Create your marinade. In a small bowl combine 3-4 scoops of honey and some of the teriyaki sauce and microwave for one minute to melt honey. Then combine some pineapple chunks, some pineapple juice, the honey mix as well as more teriyaki sauce in a bag. Shake in the bag and taste...ALWAYS TASTE everyones pallet is different and you want to make sure you have the right blend for you.
6. Season shrimp with onion powered and black pepper and add to the bag of marinade and refrigerate for 2 hours.
IN THE MEANTIME
7. Chop your peppers and dice one clove of garlic and cook them until tender, then send to the side. I like my peppers in strips however you can dice them I also added a few chunks of pineapple along with them in the pan.
8. Cook your rice, two cups of water to one cup of rice, towards the end when its almost done add a dash of pepper, sugar, one tab of butter and your veggie and pineapple mix.
9. Place one tab of butter in your pan and let it melt down. Remove your shrimp and pineapples from the bag along with some of the marinade juice and add to the pan. Cook the shrimp until it turns pink flipping from one side to the other while cooking. Once shrimp is cooked remove from pan and set to the side.
*You can cook more of the marinade by itself in the pan until it thickens some and use this as a sauce to drizzle over rice and shrimp.
10. Scoop rice and veggie mix into the hollowed out pineapple and place shrimp to either side and drizzle sauce on top.
BAM!! YOUR DONE!!
Now just wait for your guest or family to be in awe at your amazingness & enjoy!
